Is it OK to simply take a piece of solid wood and trim it down for the core instead of taking multiple pieces and glueing them together? In other words, can you skip the lamination part of the process by using a solid chunk?

definately! several producers do this, but be very picky with the block, avoid knots etc. this makes a lighter core, and with perfect material -a better one too. (unfortunately wood is seldom perfect)

Also, do you have to pre-bend the core before the ski is put together as shown here.
