So, What is Peel Ply? And, is it easily found?

Peel ply is a layer of polyester or nylon that does not stick to the epoxy. You lay it on during your lay up and once the epoxy cures, it should peel right off. It'll leave a little texture but should go away after you apply a few coats of polyureathane. It should be available at most specialty fiberglass/marine stores. I just found this link, but don't know anything about them.

A smooth layer of plastic that doesn't bond (i.e. UHMW) would work too and will give you a smooth finish without the slight texture.
