what fiberglass or carbon fiber did you use on your kid's skis?
I have a 2.5 year old who I might build skis for next season, but it sounds somewhat difficult to make them flex correctly and keep them thick enough to mount the bindings. Any input would be great!

I used 600 g triax for the kids skis. If you make the core about 6 mm at the binding area and maximum 2 mm at the tips it should be ok for snow plowing.
There will be no problem to mount the bindings. Less force than in your own skis. The screws does not have to stick more than 5mm in to the core.

Vasaloppet is a fantastic event! 15000 people starting at the same time. Lots of spectators even in the middle of nowhere. People taking their snow mobiles with their families to watch this event. Kids giving pancakes to the skiers even saw a full orchestra in the middle of the forrest...
