using steel for layup cassettes

till now i have used 18-20g aluminum to lay up boards on. i'm working on some new tooling and wondering if steel works just as well?

aluminium will give faster heat transfer

we use 16ga steel, works fine :)

I use 16 ga. or 18 ga.galv. works fine.

I've used galvanized steel, anodized al., and bare al. I prefer the bare aluminum but didn't have an issue with any of the other materials.
