how do you keep the core from shifting when running the router back and forth?

you can make your blank laminated core longer than the intended ski size and bolt the ends to your table. for example, if you're making a 180cm ski you can make a core that is about 200cm or so. bolt or screw the ends near the tips and tails to the table and router away. you'll just cut off the excess when you're done.

also, you may want to use some strong double-sided tape (double-sided duct tape works well) to help hold the core in place as well.

another method is to drill screws into your router table so that tips just peek out from the surface. the tips will grip your core and keep it from shifting around. here's a pic of what i mean:
